My secret recipe is out! :) These are great with a pasta dish or all alone. You can roll them to any size, but I typically roll them larger-than-average at a diameter of about 2.5".
To 4 pounds ground beef or turkey, add:
¼ cup Olive Oil
¼ cup Shallots or Other Dried Onions
½ cup Panko Bread Crumbs (plain)
½ cup Liquid Eggs or 2 Large Eggs
½ cup Grated Parmesan
Optional: ½ of One Large Yellow Onion
Also add the following to taste (about 2 tbsp each):
Oregano
Thyme
Rosemary
Herbs de Province
Basil
Black Pepper
Either Minced Garlic, Garlic Salt, or Garlic Powder
Drizzle some olive oil into the bottom of a baking dish. Bake meatballs uncovered until all pink is gone (an hour or so at 375 degrees Fahrenheit). Optional: When close to done, add enough spicy tomato sauce to cover all meatballs.
