Prime Rib Roast

Medium-Rare Prime Rib Roast


1. Preheat oven to 500 degrees Fahrenheit.

2. Place roast in the roasting pan fat-side up and generously rub the entire roast with butter.

3. Score or poke holes in the fatty region and place several whole cloves in random holes in the fat.

4. Sprinkle with herbs such as black pepper or your own “kitchen pepper”, basil and rosemary, or you may choose to use mustard powder and/or paprika. Optionally, before applying seasoning, you may coat the roast with real butter or ghee. Without the butter or ghee, the finished roast with have a lightly crispy top edge as shown in the image above.

5. Place (uncovered) in 500 F degree oven and let roast for about five minutes per pound*, then turn the oven off and wait 2 hours before opening the oven door.

Important! Never open door during cooking or during the 2-hour resting time. Put a reminder sign on the oven door, if needed. Opening the door even for a few seconds would cool the oven too much to continue cooking this way. This two-hour period allows the roast to complete cooking on its own as the oven slowly cools. Roast with be medium rare and very juicy. There will be no need for further resting time. Slice and serve with (or without) fresh ground horseradish and sour cream. Rosemary sprigs make an excellent garnish.


Serve with fresh horseradish and sour cream.


*Calculating Oven Time:

Roast 5 minutes per pound. Round the weight of the roast to the nearest whole number. Multiply the resulting number by five. The rib roast will be cooked at 500 degrees Fahrenheit for that many minutes and then left for two hours rest in the oven when it is turned off and cools. For example, a 5-pound roast would be cooked 5 minutes times 5 (pounds) for a total of 25 minutes. A 6-pound roast would be cooked 5 minutes times 6 (pounds) for a total of 30 minutes.

*Reheating:

Prime rib is easy to over cook. To reheat refrigerated prime rib steaks without losing the pink color, warm slice of steak in the oven (at about 325 degrees Fahrenheit) for about 4-6 minutes. Watch closely.
